Green Papya Salad

This tangy, refreshing salad is an easy introduction to Vietnamese cuisine.  With only a few simple ingredients, it is bursting with flavor.  Try it as a side, or toss some grilled shrimp on it to make it a complete meal.

  • 1 Green papaya ~1lb
  • 1/2 cup Chili lime sauce
  • 1/2 cup sliced radishes
  • 1/2 cup shredded carrots
  1. Either julienne or shred your green papaya- I run mine through the food processor using the shredding disc.  Using cheesecloth, squeeze some of the extra liquid from the green papaya.
  2. In a bowl mix your shredded papaya, radish, and carrots and dress with the chili lime sauce.
