Turkey Lettuce Wraps

 I'll write something attempting wittiness later, right now I'm just going to post the recipe, because it's tasty and easy and you should make it and I like run on sentences; almost as much as ginger or Asian food.  Okay, I'm done now.
 
  • 1 lb ground turkey
  • 1 can sliced water chestnuts, coarsely chopped
  • 2 large carrots, shredded or julienned
  • 1 red bell pepper, cubed
  • 2-3 Tbs soy sauce
  • 1/2 tsp roasted red chili paste
  • 1/2 inch fresh ginger, grated
  • 1 clove garlic, minced
  • 1 scallion, minced
  • 1/2 tsp sesame oil
  • Olive oil
  • 1 head leafy green lettuce, I prefer Boston, washed and dry
  • 1-2 green onions, chopped, optional

  1.  Heat olive oil in a skillet over medium-high heat.  Add turkey and cook until browned, around 5-6 minutes.  Add water chestnuts, and bell pepper.
  2. In a separate bowl, mix soy sauce, roasted red chili paste, ginger, scallion and garlic.  Pour sauce over meat mixture.  Add shredded carrots and cook 1-2 minutes more.  Finish with a drizzle of sesame oil.
  3. Serve turkey in lettuce cups, and top with green onions.
Notes:
  • You can sub ground beef in for turkey, it just obviously won't be as healthy
  •  Rice noodles or steamed rice are also a good way to bulk up the meal a little.  Add them to your lettuce wrap to stretch the meat filling a little further.
  • If you don't have scallion, you can sub in another clove of garlic.  Although, it is available in the produce section of practically every grocery- typically near the garlic or onions, or near the ginger.
